Black Banana Crepes

The next time the last banana in the bunch is still sitting on the counter shriveled into a black ghost of its former self, whip up this decadent breakfast…or dessert.

1 tbsp coconut oil
1 egg
1 black banana
1 tbsp chia seeds
1/2 scoop French vanilla protein powder
Dash of salt
Sprinkling of coconut sugar
Heavy cream, whipped (optional)

Heat the coconut oil in a large non-stick pan.

While that’s warming up…

  • Beat the egg until fluffy 
  • Peel and mash in the almost translucent banana
  • Add the chia seeds, protein powder and salt, mixing well

Pour the thin batter into the hot oil, slowly to keep them from touching each other, and fry until the edges are crisp. Flip when the top is no longer glossy.

Sprinkle the coconut sugar on a plate. When both sides of the crepe are a golden brown, place them on the sugar to melt it into hot deliciousness. 

If you’re feeling really fancy, whip up your own heavy cream to create a white cloud of fluffy wonderful on top. Just do it ahead of time before the crepes cool off.

A blackened banana never tasted so sweet.  

Or, if it’s strawberry season, you can skip the coconut sugar and dust powdered sugar on top of the crepes and berries.
